ChikyBoom Cuban & Tapas
ChikyBoom Cuban & Tapas's executive chef, Eduardo Bover, knows his way around traditional Cuban food. Growing up in Manzanillo, Cuba, he got plenty of first-hand experience eating it. That informal education helped him decide to become a chef. From there, he spent years honing his flavors and techniques in well-known Cuban restaurants, including Ay Que Rico and Mojito Cuban Cuisine in Brooklyn, and Café Fuego in Manhattan. He decided to combine his cooking skills with his restaurant-management skills and open ChikyBoom in Red Bank.
There, he takes an unhurried approach to Cuban cuisine. He slow cooks beef in a mild tomato sauce with garlic, onion, and peppers to create the classic comfort dish ropa vieja. He also marinates pork in citrus juice, garlic, and Cuban spices before slow-roasting it for hours to create lechon asado. For folks looking to share, Chef Bover whips up tapas, including croquetas and garlic shrimp with Cuban toast. The small plates fly out of the kitchen until midnight on Friday and Saturday, keeping late-night guests well fed.
