Chef Jin Chong wanted to add a more personal touch to his fast-casual Chinitos Burritos. So he kept the walls off the kitchen, allowing patrons to watch as their meals are built from scratch. He and his team stuff tacos and burritos with a meat or grilled-veggie base and top it with guacamole, salsa, sour cream, and shredded lettuce. Guests can even request that the chefs forgo the tortilla and pile the ingredients inside a bowl or wheelbarrow. Chef Chong crosses over to other culinary trends with housemade egg rolls and a fortune cookie given out to each customer.
