Churrasco translates to "grilled meat" in both Portuguese and Spanish. At Churrasco's, Chef Gudberto Olvera shows why his restaurant chose that name by grilling up skirt steaks alongside chorizo, chicken, and blood sausage. However, he and his team aren't afraid to honor other cultures, too. For instance, they craft classic Italian pastas, and they stuff baguette sandwiches with fixings such as grilled steak, fried egg, and cilantro sauce.
