Clock Shadow Creamery

It's almost as if Bob Wills was destined to make cheese. The Milwaukee native had a lifelong goal of becoming, in his words, a "Wisconsin stereotype," and that dream came to fruition when he married the heiress of the Cedar Grove Cheese empire. But though he bled cheddar, he still missed the festivals and cultural diversity of his hometown, so he teamed up with eco-entrepreneur Juli Kaufmann and transformed a barren, brown field in the shadow of the Allen-Bradley clock tower into Wisconsin's very first urban cheese factory—Clock Shadow Creamery.

From their Walker's Point headquarters, the factory ships out Badger State classics including squeaky cheese curds and bright yellow cheddar, and mixes things up with chevre, ricotta, and queso blanco. They also offer tours of the cheese halls, and their on-site shop sells products from some of their other favorite cheesemongers including Bon-Bree Brick, Martha's Pimento, and Cedar Grove's aged best.
