Co-op Sauce began as a fundraiser for Co-op Image, a non-profit founded by owner Mike Bancroft in 2003 to support youth arts education and entrepreneurship initiatives in Chicago's Humboldt Park neighborhood. Sauces in the Co-op Local Sauce series are crafted in small batches with locally produced ingredients to create seasonally unique flavors. Sauces bear the name of the farmer that supplied the produce for the sauces. Each Co-op Local Sauce is available for a limited time only—with so many variables at play in the sauce's production, it's impossible to make the exact same product again. Batches of Co-op Sauces can be purchased at local markets and enjoyed at local restaurants including Treat, Birchwood Kitchen, Rocking Horse, and Flying Saucer.
Co-op Local Sauce 3 Oaks contains chilies—provided by Dinges' Farm in Three Oaks, Michigan—combined with three-month, oak-aged vinegar. This sauce is the first of its kind in the Co-op Sauce family, making its debut for this G-team campaign. There are 1,000 bottles available.
Donate $7 to today’s G-Team campaign and receive a bottle of Local Sauce 3 Oaks. Normally, 50 percent of Co-op Sauces' profits go directly to Co-op Image, but with this G-team campaign, all of the proceeds will go to Co-op Image and its Glassworks program, which employs more than 50 at-risk youths each year. The Glassworks program aims to teach at-risk youths entrepreneurial life skills through the creation and sale of hand-blown glass products. G-team donations will go toward paying for supplies, glass preparation, youth stipends, and instructor stipends for the spring 2011 session of Glassworks.
