The broad front windows at Cobys: A Cafe of Distinction allow sunlight to stream in, illuminating a cozy café set up complete with freshly pressed paninis and leafy salads. Diners can settle down at a table or booth for breakfast burritos, or wait until lunch for toasted sandwiches such as the Mediterranean with roasted red peppers and balsamic-marinated portobello or the chicken caesar. Free WiFi blankets the eatery, allowing students to feed their laptop's hungry disc drive. During dinner service on Friday and Saturday, SUNY Cobleskill culinary students and faculty run the show.
