The Intermediate Chocolate: Truffles and Bon-Bons class explores the artisanal nature of chocolates while students learn about the production of truffles and bon-bons. Students then wield their new knowledge to create their own confections to take home. All supplies are included; classes are held on Friday evenings from 6 p.m. to 8 p.m.

Alternatively, students can learn the art of pastry making, exploring the classic French cream puff and new twists on other favorite desserts. Expert instructors break down recipes in simplified steps, and students take home completed pastries. All supplies are included; call ahead for the pastry-making class schedule.

Those opting to shop can browse a menu of gourmet caramel brownies ($2.50), petite red velvet cakes ($2.50), and handcrafted chocolate-almond biscotti ($2) paired with creamy cappuccinos ($3).

Gene Leiterman spends his days at a culinary college teaching the art of pastry making and his evenings at CocoFlow Chocolate Cafe molding his favorite medium. His chocolate handiwork ranges from truffles infused with rose syrup to edible sculptures--he once carved a 20-pound chocolate Easter bunny, which proceeded to lay several Cadbury eggs. He's also filled the café's menu with slices of cake, fresh crepes, and hand-painted bon-bons, such as the pistachio crème with swirls of colorful cocoa butter. During CocoFlow's hands-on weekend classes, students learn to craft their own chocolates using machinery-free European techniques that they can replicate at home.
