Marlene and Morgan Brown, siblings and owners of Coffee On the Go… use organic, fair-trade coffees in all of the drinks that fill their shop with happy chatter. The little red coffeehouse is built to resemble an old-fashioned train caboose, which is appropriate given how close the café is to the Western Museum of Mining & Industry and how frequently blues musicians write songs about it.

Cloaked in curtains of steam, baristas warm milk for cappuccinos with railroad-themed names and craft hot cocoa with Ghirardelli chocolate. Smoothies brim with the flavors of additive-free fruit-juice pulp, and a drive-up coffee kiosk ensures that on-the-go customers need only open their car window or wooden horse’s trap door to collect a drink.
