For children, the benefits of a garden extend far beyond the nutrition it provides; the act of gardening helps to facilitate mental and emotional growth and encourages participation in other outdoor activities. Concrete Safaris uses community gardens as a starting point to educate children about health, the environment, and entrepreneurship. The organization and its participants have transformed previously unused plots in East Harlem's Washington Houses area into more than 14,000 square feet of lush, earthen beds providing both knowledge and healthy noshables.

Concrete Safaris’ year-round afterschool and summer programming sprouts into action four days per week with the goal of helping kids ages 7–11 grow into community leaders. Concrete Safaris teaches kids to grow a variety of plants, encouraging physical fitness and health education as well as environmental appreciation. Participants, most of whom live in or around the Washington Houses complex and may only take part in the program after being nominated by their peers, can also learn about entrepreneurship by helping to run a farm stand that sells the gardens’ produce. The program’s myriad benefits extend to the entire community as children take health and fitness lessons home to their families and participants' school classes visit the garden for educational activities. As Concrete Safaris continues its programming, it would like to expand its collection of edible, educational flora. Participating kids have requested fruit trees for several years, but the organization has been unable to afford them.
