On Tuesday, September 20, master the art of pasta with Greg Miller, executive chef of Pal Joey’s restaurant and banquets. Ordinary chicken breasts transform into savory chicken saltimbocca as Greg stuffs them with prosciutto, fresh basil, mozzarella, and a tomato-basil sauce. Head out to Palatine on Tuesday, October 25 for a fall harvest dinner. David Kile, executive chef of Durty Nellie's West Irish Pub, whips up a dizzying array of dishes, including chicken quesadillas made with pepper jack cheese and plum sauce, and pork tenderloin glazed with barbecue sauce and garnished with pickled red onions.

During the two-hour classes, students watch and learn, ask questions, or argue with transatlantic teachers over the correct pronunciation of “basil.” After class, students can mingle as they sample the freshly prepared food, and enjoy a free wine that complements the meal.
