The marital duo behind Cooking it Up with the Carles lend their kitchen and their craft to educate eager students in the ways of simmering, sautéing, and searing their own succulent meals. In classes customized to students’ prowess and preferences, the instructors combine Tina Carle’s five-star-restaurant experience with Ed’s mastery in preparing wild game and smoked meats to create a well-rounded class calendar covering a range of techniques and ingredients.

Partake of the fruit of the sea with a Shrimp Galore class (a $65 value/person), in which students bread bantam crustaceans fetched from the Gulf in coconut and panko breadcrumbs, a tasty appetizer and a fresh salad, accompanied by either stuffed tomatoes or roasted vegetables and a dessert. Grill racks get a workout in the Barbeque Extravaganza class (a $55 value/person), in which Ed’s signature dry rub forges mouthwatering ribs alongside smoked drunken chicken, grilled vegetables, and a tangy potato salad. More gourmet fare abounds in the classes on pan-seared rib eye (a $55 value/person) and marinated lamb medallions (a $55 value/person), each paired with a potato dish, salad, and dessert. Anything Goes classes allow students to create their own cooking curriculum, and Ed and Tina are happy to work with customers to construct a unique class given at least three days' advance notice.

Classes last between two and four hours and are held at either the Carles’ kitchen or the location of your choice. Small class sizes with a maximum of 10 students allow beginner gourmands ample opportunity to ask questions about ingredients, techniques, or the precise boiling point of watched pots before enjoying the full meal made with their newly gleaned skills.

About Cooking It Up With the Carles

Tina and Ed Carle, the husband-and-wife team behind this lively cooking school, grew up cooking beside the apron strings of culinary-minded family members. Before heading to New York City to work in five-star kitchens, Tina studied the techniques of her Italian grandmother as she layered lasagna or stirred bolognese sauce. In Texas, Ed developed a knack for prepping wild game, smoked meats, and comfort fare from his family’s butter-centric cookbook. Though he’s become more health conscious through the years, Ed keeps the focus on flavor, demonstrating his know-how in dinner-party-style classes with menus including items such as barbecue brisket or wild venison braised in a dutch oven until it bugles “Taps” and collapses off the bone.
