When it comes to what sets Cool Beans' Tex-Mex cuisine apart, it's just as much about what the chefs don't have in their kitchen as what they do. Owners Rolando Garza and Priscilla Jerez went vegan with their food trailer, and the only gluten product is the flour that goes into their handmade tortillas.
Turns out, you can dish out a whole lot of delicious eats within those parameters, including a soup and tamale of the month. For the permanent parts of the menu, the chefs cook tacos such as the Warrior: quinoa chorizo, potatoes, cilantro, onion, and verde sauce. No wonder Eater called the vegan Tex-Mex trailer "one of the best-kept food secrets in Austin."
