About Cortes Restaurant
Executive chef Ernesto Cortes peddles his delicious take on Peruvian cuisine at his eatery, Cortes Restaurant. He makes six varieties of ceviche, pairing the lime juice-infused fish with Peruvian corn, fried plantains, chipotle sauce, and Peruvian Botija olive sauce. Seafood stars in many of Chef Cortes’s dishes; he ladles wine sauce over fried filets and sautés tuna in an oyster sauce. Salmon, grouper, and shrimp cook over the grill before being slathered in Anticucho—Aji panca sauce or garlic verjus emulsion. Meals are delivered to tables in the dining room bedecked with a sleek, industrial aesthetic that boasts exposed duct work, minimalist stools, and giant murals of men on horseback.
