This detail-oriented approach takes them beyond standard tacos to dishes such as chipotle prime beef tips or tampiquena, a thin-cut, grilled steak served with sautéed poblano peppers. During summer months, the kitchen highlights fresh seafood, offering such delights as watermelon shrimp ceviche or a catch-of-the-day with poblano sauce and fresh pesto vegetables.

Coyote Crossing’s dining room evokes Southwestern style.
