Crisp and Juicy Restaurant takes its name from the pitch-perfect preparation of its chicken dishes—an elusive harmony of crunch and succulence. Led by husband-wife duo Jorge and Carmen Perez, it has been serving up birds in the Peruvian style—al carbon—for about three decades. That means chefs season each chicken in a selection of traditional spices then rotisserie the bird over open-flame charcoal to lock in flavor and tenderness. Then, they serve it up on the bone or sliced alongside sides such as fried yuca and plantain or french fries and salad.
