Raw-food chef Claudia Gaviria-Abt leads her lecture-style Level 1 Raw Un-Cooking class at the St. Lawrence Market Kitchen. She demonstrates basic techniques for crafting wheat- and gluten-free live-vegan dishes using pure, whole ingredients such as coconut, avocadoes, and sprouts. The class may cover some lightly cooked items, such as warm soups, and students get to sample some of the demonstrated dishes. Upcoming classes are held from 9 a.m. to noon on the following days: Sept. 29; Oct. 6 and 21; Nov. 3; Jan. 12 and Jan. 19; and Feb. 16 and Feb. 23.
