Giampaolo Falchetti and Kathryn Philbrook opened Crudo & Cotto to do more than just serve delicious food - they wanted to enrich the community. Combining Giampaolo's passion for traditional Umbrian cuisine and Kathryn's knowledge of Pacific Northwest's local offerings, they created a unique menu that features both well-known Italian specialties and fusion dishes made with locally-grown ingredients. Crudo & Cotto aims to serve as a space where visitors can taste culinary delights while taking part in local events and chatting with their friends and families.
