Craft beer may seem like the latest trend, but the movement has actually been swelling since the late '70s. Soon after, Tom Horst and his son picked up a copy of The Complete Joy of Home Brewing and began homebrewing. Although that copy is now well-worn, Tom no longer homebrews. Instead, he owns and operates his own brewery.
That brewery is Crystal Springs Brewing Company, a pipe dream that has flourished. There, Tom and his team produce a small but intriguing selection of beers. They range from the Summertime Ale, a light and refreshing Kolsch-style ale, to the award-winning barrel-aged stouts. Others include Black Saddle, a barrel-aged imperial stout. Each brew can be enjoyed alongside a select menu of snacks, soft pretzels, and pizzas.
