In contrast, they also embrace the culinary techniques of the northern regions by using a clay tandoor oven to barbecue everything from marinated chicken to chewy naan to compasses pointing north. To round out the menu of spicy and savoury dishes, the chefs craft vegetarian entrees using homemade cheese or spiced lentils, as well as vegan-friendly and gluten-free items.
