The Afternoon in the Cellar package kicks off with a guided tour of the winery, during which one of the facility’s resident vintners enlightens guests on the winemaking process and how to effectively allay young grapes’ fears of the California Raisins. Samples unleashed directly from cavernous storage barrels swathe palates in freshly fermented flavor throughout the excursion. After the tour, patron pairs head to the candlelit barrel room to swirl, sniff, and sip four samples of Covington Cellars’ wines, learning to divine the grape’s last wishes while matching the juices to complementary food pairings. Opening Covington Cellars was a natural step for David and Cindy Lawson—he loved home winemaking, she loved pushing the boundaries of her home kitchen.
