Wine stored in a bottle gets better with age, whereas a message sent in a bottle is obsolete as soon as the island from whence it was sent runs out of food. Empty bottles at just the right time with today’s Groupon: for $45, you get a winery-tour package for two at Covington Cellars, located in Woodinville (a $90 value). The package includes the following items:
- Guided winery tour
- Samples from the barrel
- Wine flight with four samples and food pairings
- One full glass of wine<p>
Covington Cellars’ passionate, seasoned staff of winemakers and chefs share the winery’s grape-filled bounty during afternoon tasting and pairing sessions. The Afternoon in the Cellar package kicks off with a guided tour of the winery, during which one of the facility’s resident vintners enlightens guests on the winemaking process and how to effectively allay young grapes’ fears of the California Raisins. Samples unleashed directly from cavernous storage barrels swathe palates in freshly fermented flavor throughout the excursion. After the tour, patron pairs head to the candlelit barrel room to swirl, sniff, and sip four samples of Covington Cellars’ wines, learning to divine the grape’s last wishes while matching the juices to complementary food pairings. The session concludes with one full glass of wine for each patron.
Opening Covington Cellars was a natural step for David and Cindy Lawson—he loved home winemaking, she loved pushing the boundaries of her home kitchen. Eventually, they decided to turn their hobbies into something larger. David enrolled at UC Davis to study enology (the study of seminal winemaker Brian Eno) while Cindy expanded her knowledge of cooking and wine at culinary schools around the country. Today, the two oversee a diverse line of wines and a locally sourced, seasonal menu to match. They also share their enthusiasm with visitors during winemaking events, tours, dinners, and bottle-smashing parties.
