After mastering the key to foolproof rice, students stir sauces such as eel and bang-bang and cut vegetables into sushi-ready slices. After rolling, slicing, plating, and saucing, pupils walk away from each two-hour lesson with recipes and resources for home cooking. As a part of their lesson, students are treated to complimentary appetizers, three rolls (spicy tuna, California, and vegetable), as well as a free soft drink (beer or sake available for an additional fee).

Chef and instructor Kelly Viall returned to her hometown of Birmingham after 15 years of whipping up fresh-fish dishes in Seattle and along the Gulf Coast.
