Three-hour cooking lessons gather groups of two or four around campfires preheated to 375 degrees, where a culinary mastermind covers the fundamentals of cooking-utensil use, chopping and slicing techniques, and the use of a turkey as a flotation device. Though students must supply their own oven and stove, chefs show up at the door with the full complement of ingredients and equipment required to prepare the lesson’s predetermined meal and tote along a well-matched bottle of red wine. Dietary restrictions and preferences are duly noted, with instructors adapting the syllabus to suit the needs of kosher, vegetarian, organic, or low-fat diets.
