Desert Moon Vineyards’ master sommeliers soak minds in fermented knowledge juices and are armed with a vast collection of high-altitude wines. Classes are held in a barrel room and cover a variety of topics, from the history of Colorado wine growing to the proper pairing of wine, cheese, and chocolate. A fundamentals course teaches the basics of table etiquette and how various ingredients impact a wine's flavor, aroma, and ability to cope with being locked in a cellar without bursting into tears.
