At Desert Moon Vineyards, patrons dabble in the art of nosing, tasting, and pairing wines cultivated in the high altitudes of the Rocky Mountains with a calendar of immersive classes. A sommelier leads classes and fuels holiday revelry in the winery's rustic barrel room, which is strewn with aromatic oak barrels and wafts of fruity fermentation. During each two-hour session, students sharpen their palates and hone their bouquet-detection abilities to the level of Bacchus's bloodhound while imbibing four samples of vino and noshing on snacks. The Learning to Taste class establishes a firm palate foundation with instruction on sight, smell, and flavor identification, and pairing classes match libations with cheeses and chocolates as participants master how to harmonize flavors like a conductor leading a choir made up of cupcakes. After each session, guests peruse the winery's selection of locally made wine.
