About Don Antonio by Starita


Each bite of Neapolitan pizza at Don Antonio can be traced along a thin string of mozzarella cheese right back to Italy, thanks to founders Roberto Caporuscio and Antonio Starita. Mr. Caporuscio grew up on a dairy farm outside of Naples before moving to Napoli to study under renowned pizza masters—including one Antonio Starita, whom Caporuscio considers his "maestro." Indeed, Mr. Starita is something of a pizza virtuoso. He's been crafting pies since the age of 12, and he still owns one of the oldest pizzerias in his native Naples.

Because of the pair's combined efforts, chefs now pull more than 60 traditional and inventive pizzas from the wood-fired ovens at Don Antonio's New York and Atlanta locations. Many of these pies incorporate the restaurants' fresh mozzarella, which chefs spin right in-house. Once it's ready, they toss the fresh cheese onto pizzas such as pizze fritte, a lightly fried variety also stuffed with cherry tomatoes and salami. White, red, and gluten-free pizzas all make their way out to tables.

Fans of the food can learn the chefs's tricks during pizza-making classes, but it's hard to imagine they'll ever match Don Antonio's level of praise from the press. The restaurant's accolades include nods for being one of the"Best Pizza Places in the U.S." from Food & Wine Magazine as well as having the "Best Pizza" in town in 2014 from the cheese-loving folks at Creative Loafing Atlanta.
