Q&A with the Owner
What made you want to work with food? When did you first develop that passion?
When I was a kid, I liked watching my mom cook, and I love grilling over fire. When I was 23 years old, I started my own food stand.
What is one of your most popular offerings? How is it prepared?
Our Taco Pirata. We grill USDA Choice Angus top sirloin over a mesquite fire with sea salt and fresh ground pepper until it is well done. Then we chop it into small pieces and put it over melted cheese in a house-made, unbleached flour or corn tortilla. Before serving, we also toast it a little bit and pair it with our warm house-mad salsa.
Is there anything else you want to add that we didn't cover?
Real Texas BBQ is done by slow-smoking meat for about 12 hours, and real Dos Batos tacos are wood grilled for about 12 minutes.
In your own words, how would you describe your menu?
Our menu is easy. It includes wood-fired tacos, along with tortas and salads. Our food is not Tex-Mex or Interior Mexican Food. We cook Northern Mexico style, upscaling the famous tacos al carbon from Monterrey, using mesquite wood instead of lump charcoal.
