With a name that means "city" in Korean, Dosi takes its inspiration from the pojangmacha, or tented street food stalls, where strangers and friends gather to share delicious, casual meals. A typical feast might start with tempura-fried green chili peppers drizzled in sweet soy sauce, or blended kimchee-spiced kale and tapioca pearls, each turned into a crispy, salty puff in a bath of hot peanut oil. The chefs recommend a main course of kalbi, gently cooked whole beef rib glazed in soy and garlic. It pairs well with the kimchee fried rice, which features crispy pork belly and Gulf blue crab meat topped with a fried egg. If a sweet tooth persists after such a meal, try the read bean paste-filled donuts with a salted lime glaze and a side of chai green tea pudding.
