Rolls from Portland French Bakery are sliced down the middle to accommodate an artful array of hormone- and antibiotic-free meat, eggs, and dairy products. Pork belly snuggles up to sweet pineapple and spicy jalapeño, whereas chopped-barbecue-chicken sandwiches smuggle morita peppers, cumin, and achiote into their billowy innards.
