There is no limit to the recipes you can enter within Cook'n.

Would I have the ability to delete any of the preloaded recipes from the program?

Yes, if you'd rather not have the 500 that come included you can easily delete the cookbook from within Cook'n.

Q:

How do the recipes I've saved from newspapers, magazines, etc., make it into the computer. Do I have to input them or can they be scanned?

A:

You can manually enter recipes yourself pretty quickly! Click here to watch a video demonstration. You can also insert scanned images as recipe pictures. By using scanned recipes, you won't be able to take advantage of all of the Cook'n features (nutritional analysis, shopping list, etc.). However, many people chose to go this route to organize their recipes within one central database.
