Taste might be subjective, but for Chef Ryo Ozawa, cooking is certainly a competitive skill. When he's not bringing his French and Italian training to bear on the Japanese dishes at EDO, the chef regularly participates in—and often wins— national and international cooking competitions. One of his most notable triumphs? Grabbing the Gold Medal in the Individual Competition at the World Culinary Olympics in Erfurt, Germany in 2012.
Thankfully, you don't have to climb to the rank of culinary judge to sample Chef Ryo's award-winning cuisine. Simply step into EDO and order dishes like the grilled Canadian Kobe beef, served with truffled salt, truffle-flavored mushroom-rice, and a red wine teriyaki reduction. Real wasabi accompanies made-to-order sushi dishes such as hamachi marinated in maple-tamari glaze, and decadent desserts close out meals with sweet samplings of chocolate fondue and fresh fruit.
