The market cheese board is decorated with a variety of locally-made cheeses, plus bison sausage, crackers, bread, and fruit. Fondue is available in a variety of styles, such as chipotle pepper gouda, and comes with cubes of crusty bread for dipping.

It's hard to find a restaurant more worthy of the term "farm-to-table" than Eichten's Market & Cafe. The earliest version of the eatery—a cheese market and deli—opened in the late '80s to provide customers with direct access to the products produced on the Eichten family farm.
Originally dairy farmers, Joe and Mary Eichten expanded their operation in the mid 1970s, when word spread that The University of Minnesota was looking for local farmers to create European-style cheese. The Eichtens answered the call and whipped up their first wheel of Dutch gouda cheese, which still sits in a display on the family farm when it isn't busy doing its chores. Today, the farm churns out approximately 15 varieties of gouda, plus 12 varieties of gouda spreads, and Mary’s own tilsit cheese.
In the late '80s, the couple added healthy, low-fat bison to their product line, and in the early 2000s, after realizing the big demand for specialty food products, they remodeled their store and opened a full restaurant. There, guests can pair wine and beer with Eichten Farms' gourmet cheese boards, gouda fondue, and a number of fresh, bison entrees, including bison chili and burgers.
