About El Chico Cafe
It was 1926 when Mexican native Adelaida Cuellar started selling her homemade tamales and chili at the Kaufman County Fair, not far from Dallas, Texas. She made these flavorful crowd pleasers with ingredients from her farm, which she tended with her husband, Macario, and their 12 children. People swarmed Adelaida's tiny tamale stand, passing up other fair snacks in favor of her made-from-scratch comfort food. It didn't take long for Mama Cuellar to get the message: she needed to open a real restaurant.
And so, armed with farm-fresh produce, family recipes, a dozen-strong staff of their own kids, and an existing reputation for unbelievable food, the Cuellars founded the eatery that would become El Chico Cafe. Today, there are nearly 100 El Chicos peppering the South, each one maintaining a tradition of great Tex-Mex eats loved by everyone from Jimmy Carter to John Wayne to Grace Kelly—and those are just the ones documented in photos. With the Cuellars' recipes in mind, the modern menu features guacamole made tableside, poutine-esque taco fries, chicken mushroom enchiladas, and burritos topped with chili con queso.
