Using regional products including potatoes, malted barley, and goldenrod honey, they deliver spirits which uphold the centuries-old O'Neill family recipe. Their menu includes Knockboy Vodka—potato vodka—and Knockboy Poteen—Irish-style white potato whiskey and O'Connor's Mamma Juana - a honey Rhum based on Granfada Kingston's recipe from Jamaica.
