"Warmly industrial" might sound paradoxical, but it's an accurate depiction of Ethos Taverna's dining room, where folk art and antique tools adorn freckled brick walls and weathered, wooden shutters. This gently rustic décor, quietly lit by low, golden lamps, comprises a fittingly timeless atmosphere for the menu, which prizes authenticity and fresh ingredients.
When it comes to the cuisine, you won't find much in the way of the Greek-American fusion that dominates most Greek restaurants. Chefs specialize in the centuries-old classics. They bake layered ground meat, eggplant, and béchamel sauce in a traditional clay pot for the moussaka. They braise baby lamb with Kefalograviera cheese. And they charcoal grill whole bronzini, a flaky Mediterranean fish also known as loup de mer.
