Michael Smith’s journey to becoming the chef and co-owner of Extra Virgin began when he was a child in his mother’s kitchen. A restaurant manager herself, Smith’s mom indoctrinated him into performing the daily tasks of working in a kitchen: peeling potatoes, washing dishes, and sword fighting lobsters. The discipline she instilled helped Smith earn his culinary chops across the United States, eventually leading to gigs as executive chef in both Kansas City and Nice, France. The winner of a James Beard Award in 1999, Smith brings his well-traveled culinary acumen to Extra Virgin, a restaurant with a menu that serves as a kind of tapas United Nations, in which dishes from Brazil, Greece, Mexico, Turkey, and Spain each have a seat. Amid the eatery’s airy atmosphere flanked by red walls, diners share plates at tables or belly up to the wood-topped bar to pop open a bottle of wine.
