Fins and Noodles
When chef Robert Sansone moved to Colorado from Rochester, New York, he missed two things from his home region. "The only things I miss from the East," he said, "are traditional Italian food and fresh seafood." So, ever the restaurateur, Robert opened a casual restaurant to combine the healthy Mediterranean diet with the health benefits of seafood and offer an alternative to most fast-casual offerings.
Every bite of farmed fish is sustainable and has been vetted by the Monterey Bay Aquarium's Seafood Watch program, which lists the most renewable options. And Robert's passion for sustainably sourced ingredients doesn't end there. The meatballs, sausage, and chicken also come from local farms and purveyors.
