Chef John Simmons started working in kitchens at age15 stirring cabbage soup, flipping omelets, and washing dishes at a neighborhood deli. Culinary school later called his name, and it's there that he learned the classic techniques he would use for his traditional, refined French cuisine over the next several years. Those experiences eventually inspired Chef Simmons to grow into the cuisine style he now perfects each day: pan-Mediterranean tapas with international flavors.
Firefly now has two locations in the Las Vegas area, both with an eclectic and tremendous menu of small plates rooted in European cuisine. According to the Travel section of USA Today, "the menu is daunting because of its sheer size and even a group of four or six sharing can only make a small dent in the possibilities." Dishes such as grilled octopus with a paprika-lemon vinaigrette and imported chorizo are some of the menu's foundations and beer-battered shrimp tempura transcends borders, yet fits right in.
