Flavor of India
In creating its menu, Flavor of India turned to an executive chef and master of Moghlai cuisine. Indian culinary traditions shine through his ideas and dishes, which often show hints of experimentation but never stray too far from the established paths.
Many of the restaurant's goat, lamb, and chicken dishes, for instance, are prepared in a deg: a massive pot that's usually used to prepare food for large gatherings. Along with the deg, traditional tandoor ovens also receive plenty of work here. Just like the best piñatas, they're filled with scorching red coals, which roast multiple ingredients at a time. A dish called shimla mirch exemplifies the oven's power, as bell peppers stuffed with corn peas, onions, and homemade cheese meld into one delicious creation.
