Eat: Pro pig roasters use their top-secret spice blends to make dazzling dishes out of all-natural, farm-raised pork. In the ballroom of the historic Biltmore Hotel, attendees get to taste a variety of pig-centric tapas. Outside, chefs serve tender morsels of meat straight from slow-roasting whole pigs. Side dishes are provided by Fernando Desa, executive chef for Goya Foods, and Doreen Colondres, spokeswoman for the National Pork Board.
Drink: Accompanying the pork are wines from importer Frederick Wildman’s portfolio, including Cavicchioli and Luigi Bosca. Spirit lovers can sip Pig’s Nose Whiskey and Zafra Rum mojitos.

Benefiting Florida International University's Chaplin School of Hospitality & Tourism Management, the lineup always offers tons of educational seminars, tastings, demos, and dinners—and this year is no different.
