Fusha

Although the cuisine of Japan may be featured most prominently on Fusha Restaurant’s pan-Asian menu, recipes from Malaysia, Thailand, India, and Vietnam all manage to make their way onto the pages as well. This flavor diversity creates an eclectic selection of dishes that represent cultures from throughout the Pacific Rim and beyond. Steak teriyaki, edamame with sea salt, and more than 40 different sushi rolls—including options featuring everything from spicy chicken tempura and chili peppers to salmon and pineapple—demonstrate the chefs’ numerous Japanese influences. At the same time, orders of pan-fried noodles, green and red curries, and grilled eggplant with basil sauce prove that Fusha Restaurant’s chefs refuse to let their cooking be limited by borders.

The eatery’s dining area similarly showcases its roots, yet manages to depart from tradition by incorporating more than a few unconventional set pieces. Wallpaper lined with Japanese kanji surround the simple wooden tables and the sushi bar features all of its ocean-fresh seafood beneath a familiar glass case. Additionally, the front room features a tree strung with glowing blue fiber-optic lights and a line of white, knotty birch branches provides a newfound take on a pan-Asian restaurant’s stereotypical bamboo partition.
