You would not be able to reschedule a stay after it has been booked, only cancel it.

on the westin website, I do not see a "deluxe king room" I only see a "premium king room". Is there a difference?

With the booking calander model it will only let you select the dates that the offer is valid. Any other dates would be considered blackout dates.
