Cooking the Puebla Way
Pueblan cuisine is a little different from what’s traditionally considered Mexican food, due to its mixture of French, Spanish, Middle Eastern, and indigenous influences. Each day, you’ll work side by side with Chef Estela for up to three hours, creating three-course meals for lunch and dinner, including potential entrees such as almond chicken and chipotles en conserva. You’ll also learn about authentic Pueblan ingredients during a guided visit to a local produce and spice market.
Stay at Casa Carmelita
Casa Carmelita is a hacienda-style bed and breakfast located on farmland about 5 miles from the city of Tlaxcala. You’ll stay in a room in the main house, which also has a shared living room, library, and large kitchen. During your stay, you’ll enjoy two parties with appetizers, margaritas, and the musical stylings of a talented Mexican guitar duo.
About 70 miles west of Mexico City, Tlaxcala is a small Old-World city not usually visited by tourists. The town has preserved its historic parts well—you’ll see cobblestone streets and magnificent colonial buildings, many painted in salmon pink and mustard yellow. A complimentary tour will take you past the San Jose Parish Church, as well as a fountain that was a gift from King Philip IV of Spain in 1646.
