Soft candlelight flickers across the stacked stone walls inside Galisteo Bistro, where, behind the counter of an open kitchen, Le Cordon Bleu-trained chefs prepare dishes that are just as pleasing to look at as they are to eat. Aquatic creations headline the menu, and with good reason: the bistro flies its seafood in from the East Coast, particularly from the Florida Keys, where the fish are consistently in good health because it's always beach season. Wild-caught, herb-crusted red grouper is served with tomato confit, and rainbow trout is accompanied by a brown butter mushroom sauce. The menu offers plenty of options from the land, too, such as eight-rib racks of free-range New Zealand veal served with rosemary compound butter and quinoa.
