Since 1994, chef Gaynor Grant’s school has produced restaurant owners and caterers while remaining accessible to students of all skill levels and interests. Exclusive to Groupon buyers, each fall-menu cooking class teaches up to 18 aspiring chefs advanced apron-tying techniques and how to craft season-celebrating dishes, starting with garlic clouds and baked brie stuff with sun-dried tomatoes. Students then learn to surprise taste buds at the salad course, assembling a cranberry-walnut salad glazed in walnut vinaigrette. For main courses, kitchen commanders spice up pork tenderloin with pears and apricots and enliven risotto with pumpkin grown on fairy-godmother-approved farms. Class concludes as confectioners whip together chocolate soufflé.
