18Karrots was founded by the married couple Nicole and Shragi. Growing up, Nicole’s father instilled in her family a belief that fruits and vegetables were essential to maintaining a healthy body. While Nicole held this belief to be true, especially after witnessing the positive dietary impact on others, she acquiesced that some of the fruit- and vegetable-based foods she grew up on were not particularly appetizing. In contrast, Shragi was born into a family of chefs, accustomed to grandiose, flavorful meals that were delicious but not necessarily healthy. Following in his family’s tradition, Shragi spent much of his life in the culinary field, learning a diverse range of cooking styles and cuisines, yet his repertoire did not include vegetarian, raw, or whole-food dishes.
As the couple began to raise their children, they found it challenging to meld their seemingly divergent culinary backgrounds. Nicole’s primary concern was providing the kids with healthy food options, while Shragi focused mainly on preparing meals the kids would enjoy. As a compromise, Nicole stocked their home with superfoods, which Shragi would then use to prepare meals that were both healthy and delicious. As Shragi developed more recipes, the couple realized that they could share them with others and opened the 18Karrots Café in 2010. At the cafe, they formulated a juice cleanse program to promote a healthy lifestyle in their community, which is now available for customers to buy on Groupon Goods.
