My apologies for the delay and confusion! We have updated the deal description to correctly display what is included with the Basic Kit and the Ultimate Kit. Here is this updated information:

Basic Cheese-Making Kit:

Make mozzarella, burrata, queso blanco, and ricotta
Comes with liquid microbial rennet (vegetarian and kosher), calcium chloride, citric acid, and cheese salt
Detailed recipes and easy-to-follow instructions
Enough ingredients to turn 25–30 gallons of milk into cheese
In addition to the kit, you'll need real milk, a thermometer, a stainless steel or enamel pot, and a slotted spoon

Ultimate Cheese-Making Kit:

Make hundreds of different cheeses from cow, goat, and sheep milk
Comes with liquid microbial rennet (vegetarian and kosher), mesophilic culture (MM100), calcium chloride, citric acid, lipase powder, cheese salt, and soft curd draining cloth
Recipe booklet with detailed instructions for various cheeses, including mozzarella, burrata, feta, and monterey jack
Enough ingredients to turn 20–25 gallons of milk into cheese
Just add real milk

Does the milk have to be from an animal or could you use soy or almond etc?

Q:

Does the items that come from you need refrigeration? My husband who was just saying the other day was talking about making cheese. He makes low sodium spices and smokes meats and cheeses. He thinks it time to take on step further. :)

A:

Yes, but they are fine out of the fridge for 2-3 weeks. In order to extend the shelf life up to 2 years, they recommend storing in the fridge or freezer as directed on each product.

Q:

Where it states "Enough ingredients to turn 25–30 gallons of milk into cheese" how much can you make in one batch at a time? Assuming you don't need 25 gallons of milk at once?

A:

Most recipes are 1 gallon and a couple are 1 1/2 and 3. The kit will make overall about 22 pounds of cheese.
