I have only had about a week with this new set. I decided to switch to a healthier option to the typical non-stick. I can advise that (on a gas stovetop), once these pans heat up, they take a longer to cool down or respond to a reduction in flame. Even with the pan removed from the flame, food will cook for several minutes.
