You can sharpen them with a diamond stone. If you do not have one, a professional knife sharpener will need to sharpen with a diamond sharpening wheel.

I've heard that the black knives are slightly harder/more durable due to an extra process they go through during manufacturing. Can you comment on that and/or provide a reference for us to find more details?

It is true that the black knifes has an additional process perform on them, thus the higher cost. In theory the added process could increase hardness.
