Each of Johnston County’s country hams draws out the natural flavor of its pork with minimal ingredients that cure the ham without significantly altering its flavor. The curing process allows the hams to remain unrefrigerated while still in their original wrapping, though once cut into, owners can prevent the pork from drying out by wrapping it in foil or butcher paper and placing it in the fridge or an uninhabited ice cave.
