What are the calories and ingredients for each variety?

A:

The noodles are zero calories. The three ingredients of the shirataki noodles are Glucomannan, which is soluble fiber extracted from the root of a Japanese plant called a Konnyaku Imo, water and a calcium additive. This calcium additive is added to the noodles to keep their shape intact. This is a food grade calcium additive known as pickling lime or calcium hydroxide.

The angel hair shirataki noodles and fettuccini shirataki noodles with the green Miracle Noodle label, have a shelf life 6 months. They will last a couple of months beyond these dates with refrigeration and that does extend the shelf life of the noodles.

The noodles do not have to be refrigerated if the bag is unopened. They have a about a 6 moth shelf life, but they will last a couple of months beyond these dates with refrigeration and that does extend the shelf life of the noodles.

This is just not listed on the package, but the rice noodle option is exactly the same and is vegan.

There are recipes on the business' website. I would say they are not too similar to ramen noodles. A better comparison would be to rice noodles.
